A few days ago, I shared my secret to how I literally planned our meals (36 meals= 7 suppers x 4 weeks + 2 lunches x 4 weeks) for a month in 1 episode of How I Met Your Mother (20 minutes if you are unfamiliar with the show). That is substantially quicker than how I would plan one week of meals in the past.
You also may be wondering why the heck I plan a month of meals at a time…? (I’ll explain that soon in a future post 😉 ).
Back on track…Going off of my last post on a hack that has allowed me to regain my sanity and budget when meal planning recently I will now share 5 easy hotdish (or casserole) recipes that we love that are easy to make, quick, and great on the budget.

Chicken Parmesan Casserole from Thriving Home.
I first discovered this recipe in my Facebook newsfeed summer 2016 while I was pregnant with my daughter Addison. I was struggling with our supper routine. This tasty recipe is unbelievably easy. Before Addison was born I also cooked, shredded, portioned and froze 60 lbs of chicken. Being able to grab already cooked and portioned chicken to just thaw and place into this casserole makes it even easier.
Italian Sausage & Ravioli Casserole
Cooking with sausage is something I did minimally before I recently started using themes for different nights of the week for meal planning. It wasn’t due to lack of Pork, just due to being absolutely overwhelmed. This is another super simple recipe that I love throwing into our routine because we typically have everything on hand, and that is always great for the budget and a mom who procrastinates making supper. This recipe also tastes great switching out ravioli for tortellini.
A Spicy Perspective’s Sloppy Joe Casserole (One Pot Recipe)
I love one pot recipes because they are typically easy to make, and less dishes to clean up after the meal makes for a happy mom & wife.
Cheese Tortellini Pepperoni Pizza Casserole
This is amazing. Until recently my 2-year-old titled everything with noodles was mac & cheese, and we rolled with it because he would eat it all. Unfortunately, he realized a few days ago that not all recipes with noodles are mac & cheese, and they are not all delicious.
Bubble Pizza
We often will add this to our pizza night rotation so easy to make, when everyone wants pizza, and you forget to make the crust.
