Some of the best things in life can’t be planned for. But others can be, like getting 12- 6oz containers of blueberries on Saturday. Pretty straightforward there. Back in November when my addiction to Bountiful Baskets Started, so did my love for many fruits and vegetables, including Blueberries.
Anyway, one thing that I have discovered that when you are getting a large quantity of (fresh) items it is best to have a game plan in order, or you risk the chance of some or (a lot) of the items going to waste.
** Every container contains 6oz of blueberries 3/4 cup. Roughly you will get 9 cups of blueberries in this order. However, when I typically use blueberries I’ll just use 1 carton as 1 cup, just for sanities sake (and I get to stretch my berries a little further that way.)
12 -6oz Containers
6 containers = will be froze using this very simple recipe. Or this even easier recipe
1 Container = Buttermilk Blueberry Pancake Squares
My daughter shares my love for breakfast foods, therefore pancake squares are one of our favorite “during the week, while daddy is at work” foods.
* Buttermilk is one of those items that recipes will call for time to time, but the amount you buy in the store is just a small fraction of the amount that recipe calls for. So…. I freeze mine in ice cube trays… then pop them out to small pint sized freezer bags once they are frozen solid. In my brief investigation, I found that 1 cube = 1/8 cup (roughly).
1 Container = Blueberry Pancake Mini Muffins
1 Container = Blueberry Oatmeal Muffin Donuts
* This recipe calls for frozen blueberries, just throw 1 carton in the freezer for a day before you plan on making these donuts.
1 Container = Buttermilk Blueberry Banana Bread
* Substitute for Buttermilk 1 cup buttermilk = 1cup milk with 1 of the following (1tbsp. cream of tartar,1 tbsp. lemon juice or 1tbsp. vinegar).
