It is one of those frigid mid western winter days that only a hearty bowl of Chicken & Dumplings can help. An extra perk if the recipe is EXTREMELY easy, ingredients are easy to find at home or in your grocery store, and did I mention that it is both quick and delicious.
A few minutes ago, I looked online, it said it felt like -23, yesterday it felt like -37 outside… 🙁
I have been craving this dish since last time I made it (about a year ago). I have been searching high and low to find the perfect FAST, EASY, DELICIOUS, Homemade recipe for Chicken and Dumplings.
Well I never found it. I found something that was pretty close, but it had a few steps that made it absolutely ridiculous, so I just made my own recipe with what I had on hand, and it was awesome.
Chicken & Dumplings
Ingredients
- 2 Cups Shredded/ Diced Chicken
- 4 Cups Chicken Broth
- 1 Can (12oz.) Evaporated Milk
- 2 T Flour
- 4 Cups Frozen Vegetables
- 1 Can Jumbo Biscuits
Instructions

1. Cook Chicken then dice/shred it.

2. In a stock pot with Lid, make Chicken broth (4tsp bouillon with 4 cups boiling water/ or bring store bought chicken broth to a light simmer.

3. At low heat add the 2T flour and 1 Can of Evaporated Milk to help bring the broth to a thicker consistency.

4. Take the biscuits out of the tub and cut into tiny pieces. Tinier the better.

5. Add the biscuits into the thickened broth. Then add the Frozen vegetables.

6. Have the entire mixture simmer in the pot at low heat for 40 minutes stirring occasionally.
