Not going to lie, this simple Meatball recipe for Stella Cheese almost didn’t happen. Why?
Initially this post was going to be about cheese and meat trays and how awesome they are, how they are so easy to make, and how there are many different fun ways you can set up the trays…
That is still all true, (my family definitely does its part for supporting great brands like Stella Cheese and the Dairy industry in general.)
But then I had a wicked migraine on Thanksgiving in all the traveling chaos, so I didn’t do it as planned…
Then I had another one 48 hours later, so the entire post was delayed.

If a recipe is complicated I will often avoid making it at all costs. This recipe is both SIMPLE & delicious.
I may not have made the direct announcement on the blog, but 5 weeks ago, I gave birth to a beautiful baby girl (a few days late, but EXTREMELY fast). She is our third (and final) child, our second daughter. The newborn, a daughter in school, and a CRAZY toddler who is adjusting to not being the baby anymore, definitely are throwing me threw a loop.
Thankfully, I have participated in several different freezer meal swaps, and have been saving all of the freezer meals I get for after the baby is born. BEST IDEA EVER.
I LOVE FREEZER meals, and batch cooking ( cooking commonly used items ahead, and freezing them into the desired quantity for later use.) What a great idea for holiday celebrations though, whether they are at your house or they are hours away, making ahead to avoid or minimize the chaos.
As you read the recipe you may notice something interesting, yes I developed it with 3 in mind.

Easy Cheesy Homeade Meetballs with Stella Cheese
Ingredients
- 3 lbs (defrosted) beef hamburger
- 3 blocks Stella Cheese (shredded)
- 3/4 Cup Milk
- 3/4 Cup Bread Crumbs
- 3 Large Eggs
- 3 tsp Italian Seasoning
Instructions

1. Defrost hamburger if frozen.

2. Combine and mix (in a large bowl), burger, cheese, milk, bread crumbs, eggs, and seasoning.

3. Using ice cream scoop, cookie dough scoop, spoon, or just your hands scoop out mixture and make into golf ball sized meatballs.

4. Freezer: Place meatballs in a freezer safe pan, place pan in a freezer safe bag, and place all into the freezer until desired use. Bake: In a greased 9 x 13 pan bake at 350 for 30 minutes. Slowcooker: Combine with your frozen sauce (barque, spaghetti, etc. )If thaw cook on low for... if frozen cook on low for 8 hours, or high for 4 hours.
